The polished jowl steak is a sliver of muscle hidden inside the cheek of the hog, labour intensive to retrieve, but the marbling is unmatched to any other cut of pork.

100% purebred Berkshire hogs. Farm raised in southern Ontario, using traditional methods, without using hormones and antibiotics.
